Happy Blogmas Day 5!
I mentioned in my Christmas Bucket List that this year I wanted to make my own peppermint bark. This is something I've never attempted to make before and so I thought it might be fun to share how I made it here!
You Will Need
330g White Chocolate 12oz
170g Milk Chocolate 6oz
1tsp veg oil
1/2tsp peppermint extract
candy canes
TO DO
1. Line a small baking tray with baking paper
2. Melt 1/2tsp of oil with half of the white choc
3. stir in 1/4tsp peppermint extract
4. pour choc mix into pan and leave to set in the fridge for 10-15 mins until almost completely set
5. melt the milk choc with 1/2tsp of oil and stir in 1/4tsp peppermint extract
6. pour over the top of the white layer making sure to smooth out the chocolate
7. place back in the fridge to allow to semi set
8. repeat step 2 for the rest of the white chocolate
9. sprinkle the finished bark with crushed candy canes
10. Refrigerate until completely set

A while ago I made these almond flavoured cupcakes and never got round to sharing the recipe so I thought I would share it here now.
What you need
60g butter/margarine (room temperature)
100g caster sugar
2 egg
1/2tsp almond flavoring
70g self-raising flour
100g ground almonds
What to do...
Preheat oven to 180°C/325°F/Gas 5
In a bowl mix together the butter and sugar until well mixed.. add the eggs and mix well
Add in the almond flavoring and the ground almonds, mix until well combined
Sift in the flour and mix well, this is where you can add more almond flavoring depending on your personal taste
Spoon the mixture into paper cases making sure they are only half full
Bake for 20 minutes until well risen and cooked though (you could use a cake skewer to check they are fully cooked)
Leave them to cool on a wire rack
For the Icing
Icing Sugar
Butter
Almond Flavoring
Add the butter to the bowl and mix until smooth and fluffy
Sift in the icing sugar and mix well
Add the almond flavoring and mix until well combined
Add the mixture to a piping bag and decorate how you wish.

As most people will probably know, the UK is currently on Lockdown and has been for just over a week now. This has meant that I have had more time to experiment with some baking recipes which is something I've wanted to do for a while now.
The first thing I chose to make was chocolate orange cupcakes!
What you need
40g butter/margarine
140g caster sugar
1 egg
100g plain flour
40g cocoa powder
1 1/2tsp baking powder
zest of 1 orange
orange juice to taste or orange zest
What to do...
Preheat the oven to 190°C/Gas 5
Mix together the butter and sugar until well mixed.. add the eggs and mix well
this is where i added the orange zest however you could add this after the flour and cocoa powder has been added
Using a whisk add in the baking powder, flour and cocoa powder and mix until smooth - add in orange juice or orange extract to your desired taste and add extra flour/cocoa powder if the mix becomes too runny
Spoon the mixture into the paper cases making sure they are only half full
Bake in the oven for 20 mins or until they are well risen and cooked through (I usually use a skewer to test this)
Leave them to cool on a wire rack
For the Buttercream
100g icing sugar
25g cocoa powder
10-15ml warm water
100g butter
zest of 1 orange
Orange Extract to taste
What to do...
Mix together the icing sugar, cocoa and water until you have a paste like consistency
Add the butter to the mixture and whisk until smooth, add some orange extract to taste and mix well
Add the mixture to a piping bag and pipe and decorate however you wish

This is the 2nd baking post out of the 4 I have chosen to share with you in order to celebrate my 2nd Blog birthday! I first learned this recipe when I was still in school in cooking classes around 7 years ago and it has been a family favourite ever since.
What you need
150g unsalted butter
150g brown sugar
3tbsp golden syrup
300g porridge oats
Preheat the oven to 180°c (gas 4) and grease and line a baking tray
In a saucepan mix the butter and brown sugar together, stir until the sugar has melted but don't let the mixture boil (before you start to see bubbles)
Mix in the golden syrup and take the saucepan off the heat
add the porridge oats to the mixture and mix together
transfer the mixture from the saucepan into the baking tray making sure to fill spread out the mixture
bake the mixture in the oven for around 20-25 minutes or until the flapjacks have turned golden brown
once out of the oven keep the flapjacks in the tray until cool as this will help them to keep their shape and not fall apart whilst cooling
once cooled, remove from the tray and slice up ready to serve and enjoy!

This is the 4th and final recipe post in my baking week series and today I wanted to share with you a family recipe for Raspberry Buns
What you need
8oz Self Raising Flour
4oz Margerine
4oz Caster Sugar
1 Egg
2oz Jam
What to do...
Preheat oven to 210°C
Sift the flour into a large bowl
cube the butter and rub into the flour mixture using your fingertips
mix in the caster sugar
make a well in the centre of the mixture and add the egg, mixing until the mixture forms a dough
take small amounts and roll into a ball (using extra self raising flour for your hands if necessary)
make small wells in the centre of each ball and add a spoonful of jam of your choice
bake in the oven for 12 mins
set aside to cool on a wire rack before serving

This is the 2nd recipe post in my baking week series to celebrate 2 years blogging and today I wanted to share with you the recipe for mini cheese scones, this is a recipe that I found in my mum's old recipe book many years ago and have been obsessed with ever since (although I very rarely have the chance to make them).
What you need
40g Butter/Margarine (chilled)
225g Flour
1tsp Baking Powder
Pinch of salt
25g Grated Cheese
150ml Milk
What to do...
Preheat oven to 220°C/210°C Fan/Gas 7
Sift the flour, baking powder and pinch of salt into a large bowl
cube the butter and rub into the flour mixture using your fingertips
stir in grated cheese
add milk to make a soft dough
place the flour onto a floured surface and roll out until around 2cm thick
cut out small circles using
bake in the oven for 7-8 mins
serve warm or cool depending on preference

I recently realised that a few weeks ago my blog turned 2! Last year I celebrated by sharing some throwback summer photos from when I was younger (you can check out that post here) however this year I wanted to share with you some of my favourite baking recipes that I've found over the years or that have been passed down by family members through the years. The plan is to share a new recipe every other day this week starting today!
This recipe is one of my favourites and it was originally found here
What you need
40g butter/margarine (room temperature)
110g caster sugar
1 egg
1/4tsp vanilla extract
100g plain flour
120ml milk
1 1/2tsp baking powder
20g cocoa powder
What to do...
Preheat oven to 170°C/325°F/Gas 3
Line a 12-hole muffin tin with cases
Mix the flour, cocoa powder, sugar, baking powder, salt and butter into a bowl until they have a sandy consistency
mix the rest of the ingredients into a jug
slowly pour half of the mixture into the dry mixture and mix on high until smooth being careful not to over mix
spoon into paper cases until 2/3rds full
bake in the oven for 20-25 mins
set aside to cool on a wire rack before decorating

As I'm sure most of you will probably know by now, today is Pancake Day! So in honour of this amazing day, devoted to basically eating desert! (And what's better than that?) I wanted to share with you an easy foolproof pancake recipe and how I will be enjoying it tonight!
What you need
1 cup of flour
1 cup semi-skimmed milk
1 egg
1/4tsp vanilla extract
Butter/oil for greasing the pan
Mix the milk together with the egg and the vanilla extract into a jug (using a jug vs a bowl makes it easier to control when you're pouring the mixture out later)
Slowly whisk in the flour making sure the mixture is smooth
Heat up a small sized frying pan and add in the butter/oil to ensure the pancake doesn't stick (make sure to pour out any excess oil afterwards)
Pour an even amount of pancake mix into the pan, making sure the mix is spread evenly throughout the pan
Cook for a few minutes (or until the pancake moves around freely) and flip, cook the other side for a minute or two and set aside to repeat the process with the remainder of your batter (pancakes can be kept warm in a low heated oven if needed)
Add toppings as required and enjoy!

As it's Halloween in less than 2 days I decided to make some Halloween inspired cupcakes! I've been wanting to post a baking blog post for a while now so this felt like the perfect time!
I'm definitely someone who enjoys creating blog posts based around themes and certain times of year here are a couple of other theme related blog posts you can check out.
Valentine's Day Hot Chocolate
So here is everything you will need to make Halloween cupcakes, perfect for party's or just personal enjoyment! (based on a recipe from BBC Good Food)
110g softened butter, caster sugar & self-raising flour
2 eggs (lightly beaten)
1tsp vanilla extract
1-2 tbsp milk
140g butter (softened)
280g icing sugar
1-2 tbsp milk
orange & black food colouring
Preheat the oven to 180°c (gas 4) and grease and line a baking tray with 12 muffin cases
cream together the butter and sugar until pale
add in the eggs and vanilla extract and beat the mixture
fold in the flour adding a little milk if needed, spoon the mixture into the cases until half full
bake in the oven for 10-15 minutes until golden, set aside the cakes on a cooling rack for 10 minutes until cool this ensures that the icing doesn't melt once added to the cake
for the icing, beat the icing sugar and butter together in a bowl until soft, add some milk if necessary
separate the icing into 3 bowls and add the orange food colouring to one bowl, and the black food colouring into another
mix until the icing and colouring are well combined
spoon the icing into a piping bag of your choice and pipe the icing in a circle motion onto the cupcakes
Decorate the cupcakes how you choose!
Ghost - melted and cooled white chocolate in the shape of a circle and covered in icing with edible silver balls for the eyes
Spider Web - Black buttercream icing with yellow icing detail for the web (cause I didn't have any white left!)
Pumpkin - Orange buttercream icing for the pumpkin, rainbow popping candy and green icing for the stalk
Skull - white buttercream icing, skull detail and red icing for the blood

CHRISTMAS COUNTDOWN - 13 DAYS!!
For today's post I wanted to share with you how I decorated my Christmas cookies! For the recipe I used the 'Heart Tree Cut Out Cookie' recipe from A Spicy Perspective
I used a range of different cookie cutters including Christmas Trees and circles (regular cookie shape) and put the cookie shapes into the oven for around 6-8 minutes. This gave them the perfect sugar cookie colour. I then put the cookies onto a cooling rack to allow them to cool down before decorating. (I actually ended up leaving them for a few days as I was so busy with work!)
Before making the cookies I decided to do some shopping to make sure I had the perfect decorations for how I wanted my cookies to end up. I found various different icing colours, Christmas decorations, edible colour sprays, gems and hundreds & thousands in my local supermarket for a very affordable price.

200g chocolate chips or fudge chunks
Preheat the oven to 180°c (gas 4) and grease and line 2 baking trays
In a large bowl, cream the butter and sugar together until fluffy. Stir in the egg and mix thoroughly
In a separate bowl, sift the cocoa powder, plain flour and bicarbonate of soda together
Stir the dry mixture into the batter gradually. Add the chocolate chips once completely combined and stir well
Spoon out small portions onto each tray and bake for around 15-20 mins
Allow to cool and serve (I use a cookie cutter to get each cookie the same size)
